What does it mean when we say that Northern Grace is a Bai Mu Dan?

White tea can be separated into different levels of white tea or types.

  1. ‘Bai Hao Yin Zhen’/’Silver Needle’ is the first and most exclusive white tea as it is only the top buds that are plucked. This has to be done by hand and approximately 5 kg fresh leaves get into 500 gr dried white top bud tea.
  2. ‘Bai Mu Dan’ also called ‘White peony’. This white tea is known for consistent of a top bud and 1-2 leaves, just below the top bud.
  3. ‘Gongmei’ is the top bud and 3-4 leaves. It is classified after ‘Silver Needle’ and ‘Bai Mu Dan’.
  4. Shoumei also called ‘Longevity Eyebrow’ as it is only 3-5 loose leaves, no top bud, and because it is bigger leaves and the process they have they have same shape as an eyebrow.

To get back to Northern Grace, showing this is a high quality tea, with a top bud and 1-2 leaves sitting on a the small stem or top branch.

This tea is perfect for mornings, afternoons or evenings. It is known for its slightly malty notes, is slightly nutty, is sweetness and freshness.

Brew it with 2 gr in 95°C for 4 minutes and it will be perfect. You can brew on it several times.
